搅拌搅动液体使之发生某种方式的循环流动,从而使物料混合均匀或使物理、化学过程加速的操作。搅拌在工业生产中的应用有:①气泡在液体中的分散,如空气分散于发酵液中,以提供发酵过程所需的氧;②液滴在与其不互溶的液体中的分散,如油分散于水中制成乳浊液;③固体颗粒在液体中的悬浮,如向树脂溶液中加入颜料,以调制涂料;④互溶液体的混合,如使溶液稀释,或为加速互溶组分间的化学反应等。此外,搅拌还可以强化液体与固体壁面之间的传热,并使物料受热均匀。搅拌的方法有机械搅拌和气流搅拌。搅拌槽内液体的运动,从尺度上分为总体流动和湍流脉动。总体流动的流量称为循环量,加大循环量有利于提高宏观混合的调匀度(见混合程度)。湍流脉动的强度与流体离开搅拌器时的速度有关,加强湍流脉动有利于减小分隔尺度与分隔强度。不同的过程对这两种流动有不同的要求。液滴、气泡的分散,需要强烈的湍流脉动;固体颗粒的均匀悬浮,有赖于总体流动。搅拌时能量在这两种流动上的分配,是搅拌器设计中的重要问题。在搅拌混合物时,两相的密度差、粘度及界面张力对搅拌操作有很大影响。密度差和界面张力越小,物系越易于达到稳定的分散;粘度越大越不利于形成良好的循环流动和足够的湍流脉动,并消耗较大的搅拌功率。搅拌槽内流体的运动是复杂的单相流或多相流,目前都还没有完整的描述方法。非牛顿流体的搅拌,在流动状态和功率消耗方面都有一些特殊的规律。搅拌槽内流体流动参数的测量,搅拌功率的预计,以及搅拌装置的放大方法等,都是搅拌理论研究和工程应用中的重要课题。
