食品保藏食品保藏foodpreservation为使食品在运输或存放时达到防腐、保鲜、增强其营养价值、提高其经济效益的目的所采取的食品工艺处理。通过各种保藏方法,可以杀灭食品中的微生物,钝化食品中的酶活性,排除温度、湿度、氧和紫外线等环境因素的作用。食品保藏的主要方法有:①低温保藏。可控制食品中微生物和酶的活性,减弱其中一切化学反应过程,达到防腐保藏的目的。②高温保藏。高温处理可杀灭食品的微生物,破坏酶的活性,再结合闭封断氧防污染等手段,可达到防腐保藏目的。温度达100℃以上的称高温灭菌。③脱水保藏。水分是微生物生存繁殖和一切化学反应所必需的物质,因而食品脱水可起到防腐保藏作用。食品脱水法一般有日晒、阴干、加热面烫干、喷雾、减压蒸干和冷冻减压蒸干等。④辐照保藏。食品经过波长在200纳米以下的电磁波辐照,可杀菌防腐。辐照还可抑制发芽、杀虫和使食品改性,有食品温度不上升,能带包装成批处理,方便和效率高等优点。另外,还有高渗(用食盐或糖提高食品的渗透压,使其对食品内微生物呈高渗状态,从而使菌体脱水死亡,抑制食品内酶的活性,减少食品氧含量)、提高食品氢离子浓度(pH达4.5以下,可杀死腐败菌和常见的致病菌)、气体保藏(调整环境中O2与CO2的比例,以有效保藏新鲜水果)、用化学防腐剂保藏等,但其效果尚存在一些问题,实际应用受到一定限制。
